Banana Muffins

I tweaked a muffin recipe that I have (but that I don’t really like) and came up with one that I think will work… I made a few more adjustments that I still haven’t tried, but I took the risk and am posting it anyway… :o)

The ones I made this morning had a perfect texture and were so light and moist, but didn’t have much flavor. They’d probably be great with a streusel topping though! If this recipe doesn’t work out, I’ll just remove the recipe… LOL

1 3/4 cups flour

1/2 cup brown sugar

2 tsp baking powder

3/4 tsp baking soda

1/2 tsp salt

1 egg

1/2 cup milk

1/4 cup oil

1 tsp vanilla

1/8 cup sour cream

1-2 small ripe bananas, smashed

Mix dry ingredients in large mixing bowl. Whisk together egg, milk, oil and vanilla. Stir into dry ingredients. Add sour cream and banana and mix well.

Drop into greased or papered muffin tins. Bake at 400 for 15 – 20 minutes or until toothpick comes out clean.

Tater Tot Egg Bake

I got this recipe in a Schwan’s catalog and I love it! It’s fast and easy and filling, too! I make it with all kinds of meats and veggies, too!  I made it this year for the Easter breakfast at church tomorrow…
1 lb sausage browned and drained
1/2 cup chopped onion
10 eggs, beaten
1/2 cup milk
2 cups shredded cheese
1/2-1 bag of tater rounds (the flat tater tots)
Preheat oven to 350
Mix eggs, milk and cheese. Stir in potato rounds, onions and sausage. Pour into greased 9x13 baking dish.

Bake for about 40-60 minutes or until set. Stick a knife in the middle to see if it comes out clean.
