Foil Packet Bibimbap

I had leftover cooked rice and hamburger and all the fixings for bibimbap. But I wanted something fast and something I could cook outside. It's just too hot in the kitchen to cook! So I wondered if you could put it all in a foil packet on the grill.

Yup... you can.

Place a scoop of cooked white rice in the center of a piece of foil. Place individual sized servings of cooked hamburger (with some fresh minced garlic on top) and your choice of matchstick-sliced veggies around the rice.



You can use so many different veggies, but some are more traditional:
carrots
cucumbers
spinach (you don't have to cut this up)
mushrooms
bean sprouts

Drizzle with sesame oil, vegetable oil and soy sauce to taste.

Seal up the foil packets and cook over medium coals until heated through, turning once while cooking. Cooking time depends on the heat of your grill and how full your packets are.



Open packets, top with an over easy cooked egg and some sesame seeds.



Squirt some gochujang (Korean hot sauce) on top, mix it all together and eat with chopsticks. Or a fork... ;)

Pressure Cooker Hobo Casserole

This is a pretty tasty casserole that saves about an hour and 25 minutes of cook time in your pressure cooker.

Brown 1 pound of hamburger in the pressure cooker on the meat setting with lid off. Allow a few minutes for pot to preheat.

Add 1/4 cup chopped onion and brown with meat. Turn off pot when meat is cooked.


Slice 2 peeled medium-sized potatoes into thick slices. Place on top of meat.



Mix 1 can of cream of mushroom soup with 3/4 cup beef broth. Pour over potatoes and meat.



Cook on veggies setting for 4 minutes. Quick release.


Top with a 1/2 cup shredded cheese. Return lid to let cheese melt.



Sprinkle top with french-fried onions.


It might be a bit wet. So it can sit for a few minutes to cool and thicken on plate.

Pressure Cooker Meatballs with Mushroom Gravy

Here's a simple all-in-one recipe for your pressure cooker with basically no prep work. It will be done in only 20 minutes including the time to build up pressure.



Throw 20-30 meatballs (thaw first if frozen) into the pot. Add one can cream of mushroom soup, one can golden mushroom soup, 1 Tablespoon beef bouillon, paprika, black pepper, and egg noodles. Stir gently.

Pour enough water over to just cover the noodles...


Cook on soup/stew setting for 10 minutes.


The gravy will thicken a bit as it sits.

Cranberry Merlot Meatballs

This is one of my new favorite crock pot meals! I can make it in a snap and it tastes rather fancy and elegant. If I use frozen meatballs, it only takes a minute to throw it all together and cooks on high in only about 3 hours. We love it served over mashed potatoes but is also a lovely appetizer!

Whisk together:

1 can jellied cranberry sauce

1 cup brown sugar

1 cup merlot (or any red wine or cranberry juice)

2 teaspoons stone ground mustard (or any other hot mustard)

Pour over 30-40 meatballs.

Greek Pita Tacos

This is an interesting twist on your standard taco with a little bit of Greek thrown in for fun! Opa!

1 pound hamburger

1/2 cup red onion, chopped

4-5 cloves garlic, minced

1/2 teaspoon each: oregano, dill weed, garlic powder, lemon pepper, ground mustard, salt, black pepper

1 can diced tomatoes

1 small can sliced olives

3 large handfuls of baby spinach

feta cheese

Brown 1 pound of ground beef in a large skillet. Add onion and garlic and cook until onion is tender.

Add tomatoes and seasonings. Cook until liquid is absorbed. Add olives and spinach. Cook for about 2-3 minutes or until spinach is wilted.

Serve on pitas with crumbled feta cheese.

Beef N Mushroom Shepherd’s Pie

This is my idea of convenience food! Mostly thanks to instant mashed potatoes! The baby red roasted garlic & parmesan ones are perfect for this recipe and all ready to go in about 8 minutes!

Having already browned hamburger frozen in the freezer makes it even faster and easier!

1 pound ground beef, browned

1/2 onion, chopped

4-6 cloves garlic, minced

1/2 pound fresh mushrooms, sliced

1 teaspoon basil

1 teaspoon oregano

1/2 teaspoon crushed red pepper

salt and pepper, to taste

2 packets of instant mashed potatoes, prepared

After the beef is cooked add the onion, garlic and mushrooms. Sauté just until they are tender. Add seasonings.

Pour the beef mixture into a greased glass baking dish.

Lasagna Roll-Ups

This is my new favorite way to prepare lasagna! I love it! It isn’t any more difficult and is so much easier and prettier to serve than a slab of falling apart lasagna. It went together fast and didn’t take nearly as long to bake, either.

I made 10 rolls for our supper with salad and bread and it was enough to serve the 5 of us. But this recipe can be easily changed to make as little or as much as you need. You could also add cooked meat like pepperoni, Italian sausage or hamburger.

This recipe is for 10 lasagna roll-ups:

1 can spaghetti sauce

10 lasagna noodles: boiled, drained, rinsed, and laid out to dry on a towel

1 container ricotta cheese

2-3 cups shredded mozzarella

1/2 cup shredded parmesan

1 egg, beaten

2-4 cloves of minced garlic

chopped spinach, fresh or frozen (if using frozen, thaw it and pat it dry before using)

Spray a glass 9x13 baking pan with non-stick spray. Cover the bottom with spaghetti sauce.

Mix the ricotta, half the shredded cheeses, egg and garlic in a small bowl. Stir in spinach.

Spread a bit of the ricotta mixture on each noodle.

Loosely roll them and place them seam side down in the baking dish.

lasangna rolls 02Pour the rest of the sauce over the top of the rolls. Sprinkle with remaining cheeses.

lasangna rolls 04Cover with foil and bake at 350 until bubbly and heated through. It took mine about 30-40 minutes.

Thai Tacos

These tacos are seasoned with a Thai inspired sauce and can be served on pita bread or tortillas. Easy to make and tasty to eat, they are an ideal meal for a busy summer day!

1 pound hamburger

1 or 2 red bell peppers, thinly sliced

2 Tablespoons minced ginger

3 cloves chopped garlic

1 teaspoon crushed red pepper flakes

1/2 cup chopped cilantro

3 Tablespoons creamy peanut butter

2 Tablespoons lime juice

2 Tablespoons soy sauce

1 Tablespoon sesame oil

Brown hamburger in large skillet until well done. Add peppers, ginger, garlic and red pepper flakes. Cook until peppers are tender.

Whisk together remaining ingredients. Stir into hamburger and remove from heat.

Serve in pita bread or flour tortillas. Garnish with lettuce or shredded cabbage. Serve with wedges of fresh lime to squeeze on top of tacos.

Asian Beef and Noodles

This is such an easy dish, it hardly even counts as cooking. It’s my version of Hamburger Helper, only cheaper, and in my opinion, better. :o)

1 pound ground beef

2 packages of ramen noodles

1 bag frozen stir-fry veggies

1/4 tsp ginger

2 tbsp sliced green onion

Brown ground beef in large skillet and season with flavor packets from ramen noodles.

Add 2 cups water, crushed ramen noodles, veggies, and ginger. Bring to a boil and then reduce heat. Cover and simmer 3-5 minutes.

Garnish with green onion and serve.

Thai Tacos

I love this spicy peanut sauce with hamburger. It is an easy, quick to prepare meal that we all like. I serve it with tortilla chips and melon on the side.

1 1/2 pounds hamburger

2 medium sliced red bell peppers

2 Tbsp minced ginger

3 cloves minced garlic

1 tsp crushed red pepper flakes

1/2 cup chopped cilantro

3 Tbsp creamy peanut butter

2 Tbsp lime juice

2 Tbsp soy sauce

1 Tbsp sesame oil

Brown and drain hamburger. Add peppers, ginger, garlic, and crushed red pepper to skillet. Cook until peppers are crisp-tender.

Mix peanut butter, cilantro, lime juice, soy sauce and sesame oil with whisk to make a sauce. Stir into beef mixture. Remove from heat.

Stuff meat mixture into pita halves and garnish with lettuce just before serving.

Waikiki Sauce

This sauce was orginally made for meatballs and was my favorite supper for years. But this sweet sauce is good on cooked sliced sausages, chicken, or meatballs. Serve over white rice. I use the extra pineapple chunks to make a fruit salad with mandarin oranges and fresh pear, banana or apple (or all 3) to serve as a side.

This makes a quick easy supper.


1 can pineapple chunks, drained and reserve juice in bowl


Add to juice:

1/2 cup brown sugar

1 tbsp soy sauce

2 tbsp corn starch

1/4 cup sweet chili sauce (opt.) , use more or less to taste


Mix well with whisk. Pour over cooked meat, chopped green pepper and pineapple chunks in skillet and cook until thick and bubbly.
