Pressure Cooker Broccoli Beef

This recipe uses the 2 pot system to keep the rice and meat separate.

I way overcooked the broccoli and I am writing this recipe the way I think I should try next time...



Ingredients:
thinly cut steak slices
onion, sliced
fresh broccoli florets

1/4 cup soy sauce
1/4 cup water
2 Tablespoons brown sugar
1 Tablespoon minced garlic
1 teaspoon minced ginger
1 teaspoon beef bouillon
crushed red pepper, to taste

Whisk together for sauce



Turn pot on to the 15 minute chicken/meat setting and let heat up for about 5 minutes with the lid off. Add sesame oil and saute steak until brown.


Then add sauce and put the steamer tray in. Then I put equal parts of white rice and water in a small pot that fit on top of the steamer with the lid on.

Then I set it for 6 minutes on the rice/risotto setting.



Let it natural release for 10 minutes. Release any remaining steam.

Remove rice and add broccoli and onions to the meat.




Set for 2 minutes on vegetable setting. Quick release steam, stir and serve over rice...

Pressure Cooker Meatballs with Mushroom Gravy

Here's a simple all-in-one recipe for your pressure cooker with basically no prep work. It will be done in only 20 minutes including the time to build up pressure.



Throw 20-30 meatballs (thaw first if frozen) into the pot. Add one can cream of mushroom soup, one can golden mushroom soup, 1 Tablespoon beef bouillon, paprika, black pepper, and egg noodles. Stir gently.

Pour enough water over to just cover the noodles...


Cook on soup/stew setting for 10 minutes.


The gravy will thicken a bit as it sits.

Pressure Cooker Coconut Chicken Curry

This is my recipe adapted for the Ninja Foodi Deluxe...

Cut up 2 large boneless, skinless chicken breasts into chunks

Brown the chicken on sauté setting with a bit of oil.

Cut up 3 peeled potatoes into small bite-sized pieces

Cut up 3-4 peeled carrots into 1/4” slices

Chop up 1/2 of an onion

Add potatoes, carrots and onion to chicken in pot with 1 cup water. 

Mix in 1/4 cup (more or less to taste) of curry paste and mix well. It's pretty spicy stuff!

Put the tall rack in the pot. Just move stuff around to make it sit on the bottom. 

Put equal parts of white rice and water in a small pot that fit on top of the rack with the lid on. (this picture is from my old IP)




Pressure cook on HI for 2 minutes. 

Let it natural release for 10 minutes. Release any remaining steam.

Pour one can of coconut milk and mix well.

Serve the curry over white rice.

Toad in a Hole

In 2016 I tried Yorkshire pudding and liked it so much I wanted to try Toad in a Hole (Yorkshire pudding with sausage). And Toad in a Hole is such a cool name. They are also the perfect accompaniment to an episode of Sherlock...



This recipe is for 4-6 personal-sized Toad in a Holes.

Spray large muffin pan with cooking spray (you can also use a standard size one). Place one pre-cooked sausage in each cup.

Place pan in oven, turn on to 400 and let sit in oven while you make the batter and oven pre-heats.

Beat together until smooth:
1 egg
1/4 cup milk
1/2 cup flour
1/4 teaspoon salt
pepper to taste

Beat in another 1/4 cup milk and 1/2 Tablespoon melted butter

Remove pan from oven and brush cups generously with melted butter.

Pour batter evenly over sausages.

Place back into oven and bake for 20-25 minutes or until puffy and dark golden brown.
