Using up 24 pounds of strawberries has not been a problem and this recipe was the perfect Spring time supper! Strawberries, cream cheese and a bit of orange combine to make a super tasty and slightly sweet French toast that is good for breakfast or supper…
Filling:
2 oz cream cheese
1/4 cup powdered sugar
1 Tablespoon orange juice
grated orange zest from one small orange
Beat cream cheese until smooth. Mix in remaining ingredients.
Slice up a loaf of Italian or French bread into 10-12 thick slices.
Beat 3 eggs, 1 1/2 cups milk and 1 teaspoon of vanilla for your French toast.
Dip bread in batter on both sides and cook on griddle until golden brown on both sides.
While your French toast is cooking, slice up some fresh strawberries.
Serve French toast while still hot spread with the cream cheese mixture, layer with strawberries and top with more berries and powdered sugar.
